Sweet Honey Cornbread

I've been seeing a lot of cornbread recipes out there lately, and I have to tell you, I'm a big fan of the sweet versions. The savory ones that have a little kick to them just don't do it for me. Especially since I normally serve cornbread with soups and such that already have a bite to them, so the sweeter versions work to counteract a bit of that heat. Sorry, to all of you who think sweet cornbread is a bunch of bologna, but I like it!

This is my first time making cornbread entirely from scratch, and there really is nothing to it. It's so easy, I don't know why I even bothered with the mix in the first place. You can really taste the honey in these, but they aren't too sweet. They baked up beautifully, with a slightly crisp edge and a moist, crumbly center.  With a nice pat of butter, these are just perfection.

Instead of eating my little disaster of a gumbo, I ate 3 of these for dinner. :)

Sweet Honey Cornbread Muffins

1 cup yellow cornmeal
1 cup AP flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 cup whole milk
2 large eggs
1/2 stick butter, melted
1/4 cup honey
  • Preheat oven to 400℉.
  • Mix together the cornmeal, flour, baking powder, sugar and salt.
  • In a separate bowl, whisk together the milk, eggs, butter and honey.
  • Combine the wet and dry, stirring with a wooden spoon just until combined.
  • Line a 12-cup muffin tin with paper liners and fill each cup with mixture till about 3/4 full.
  • Bake for approximately 15 minutes, or until just golden brown.

Atta girl! See? JIF mix is no longer in your grocery cart, right? These look so yummy! Like you, I'm a sweet cornbread kinda gal.

I am actually not a corn bread person, but I see that you adapted the recipe from the Neelys. I love watching the two of them!

It's nice to not have to depend on mixes. Homemade versions are always a little bit better.

I like sweet cornbread too, so what? :-)

But I always, always, always buy organic corn/cornmeal. Almost 100% of the corn in this country is genetically modified. Scary stuff.

And with the butter...OMG!

My cornbread was so sad (the birds wouldn't eat it),so I decided I need to stay away from All-American recipes ...however you are having me rethink that idea.

I love sweet cornbread, we eat it smothered in jam over here :)

If you could stop at three, you're a better woman than I! Listen --- I'm the author of THE CORNBREAD GOSPELS (check it on amazon, http://www.amazon.com/Cornbread-Gospels-Crescent-Dragonwagon/dp/0761119167) and spent a lot of time researching the why of the whole sweet-non-sweet question. I can probably talk the publisher into sending you a review copy if you like (there are also many, she said immodestly) fabulous recipes)Just e me your snailmail address and I'll ask them to get one off to you. O'm at crescent@dragonwagonwagon.com. I TOTAALY agree abt nixing the Jiffy, and also w/ Michelle's comment on organic. Fresh organic stoneground cornmeal --- takes cornbread to a whole new level.

I don't think I've ever tried cornbread with honey in it. Sounds good and I must give it a try!

Now that should make anyone from the south proud.

We are really on the same wavelength : scones, muffins, welsh cakes and these. I can just taste them now! Sweet!

Yeah, I grew up on the boxed JIF (or Jiffy?) mix, but making muffins is so easy. These look great!

Hi Debby - Just say "no" to the blue box, that is my new motto! :)

Hi Sugarlens - I'm slightly amused by the Neelys. Every time I watch the show I wish they would show out takes where they are screaming at each other to get out of the way and quit hogging the counter space. That's at least what would go down in my kitchen!

Hi Michelle - Your comment made me run to the pantry and inspect the package of cornmeal I bought. Thankfully, that grocery visit must have been to Whole Foods!

Hi Noble Pig - I can't imagine cornbread without it!

Hi Claudia - I swear that if I can make it, so can you!

Hi Sara - I've never had jam with cornbread, going to have to try that.

Hi Crescent Dragonwagon - Thanks for stopping by, sounds like you are the expert on cornbread!

Hi Lori - I think you will really like it.

Hi Foodie - Haha, I hope so!

Hi Jamie - Jiffy still has a place in my heart, but I had no idea that it took next to nothing to go without it.

Your cornbread turned out great. When I was growing up we ate cornbread almost everyday. In the south, because it was served with dinner, it wasn't sweet cornbread.

My father-in-law from the north likes his sweet like yours and his mother served it at breakfast with syrup. At 96 he still loves his sweet cornbread. I'll have to fix yours for him the next time we visit. Thanks for the recipe.

i concur--the only thing cornbread mix is even remotely good for is mixing up a real quick topping for a chili bake. :)
